Introduction

Lightly seasoned with dried chipotle & sliced tomato. With a golden crust on top that distributes the flavor of the tomato. This dish is light, satisfing. Serve with your favorite vegtables. Ingredients

    1 Tilapia fillet
    2 Slice Tomato, fresh
    ¾ Cup Dry Bread crumbs
    Couple shakes, Chipotle seasoning or Louisiana seasoning
    1 Tbs margarine or light spread

Directions

Pre heat oven to 350, with rack in middle

Place fish ( fresh or frozen) 0n greased cooking ware with low sides, I use a glass pie dish

Add seasoning to the top side of the fillet

Add Slices of tomato thin or up to a 1/4 inch

Mix bread crumbs with margarine or light spread, until it is absorbed evenly.

sprinkle bread crumbs lightly over the tomato and more on the exposed portions of the fish. Remaining crumbs can be placed close to the outer edges of the fish.

Cooking time will be 20 to 30 min, done when crumbs are golden brown.

Transfer to your plate and add vegetables, best when steamed.
