    2 cups sliced very ripe bananas (2-3 large)
    14 Vanilla wafers
    3 eggs
    1/2 cup egg substitue
    1/4 cup flour
    2 cups 1% milk
    1 teas. vanilla
    3/4 cup sugar (divided)


Preheat oven to 400/ 0 Slice up bananas. On the bottom of a large round casserole dish. layer vanilla wafers Layer bananas on top of wafers. Separate 3 eggs, discarding 2 yolks. In a medium saucepan, mix remaining yolk with the egg substitue. Add 1/2 cup sugar, flour and milk. Cook over medium heat until it begins to boil. Once it starts to boil, reduce heat to low and cook until thickened, stirring constantly to prevent scorching. Add vanilla to pudding.. Pour over bananas and wafers.
In a small mixing bowl, beat egg whites until peaked. Add 1/4 cup sugar. Pour over pudding. Place in oven until peaks are brown.
Serves approx. 8 2/3-cup servings.
