Introduction

Cool Summer Salad with Tex Mex Flavour.
Add or reduce chilis, lime juice and Seasonings to your own taste.
Serve as a side dish for dinner or add Tuna, Chicken or prawns for a main course or lunch.
We like it for an evening snack too.

Ingredients

    6 Apples
    1 Cup Green Pepper
    1 Cup Red Pepper
    1 Cup Yellow Pepper
    1 Cup Onion
    1 Cup Celery
    1 Cup Canned Black Beans
    1 Cup Frozen Corn
    1/8 Cup Canned Green Chili Peppers
    1 Clove Garlic chopped
    3 Tbsp Olive Oil
    1/4 Cup Fresh Lime Juice
    Tex Mex Seasoning
    1 Tbsp Chopped Parsley

Directions

Dice the apples and toss with 1/2 the lime juice to keep from browning

Dice all the peppers, the onion and celery and add to apples

Rinse Black Beans, add with corn and chilis

In a separate bowl mix olive oil with lime juice, garlic and parsley and pour over salad

Sprinkle with Tex Mex Seasoning and Toss.
