Introduction

Quick simple and tasty. Not true mexican, but kids love it and it takes almost no time to put it together. Quick simple and tasty. Not true mexican, but kids love it and it takes almost no time to put it together.

Ingredients

    4 flour tortilla, 8 inch
    1 can no fat Traditional refried beans
    1 pkg Zatarain's Yellow Rice, prepared without fat
    2 cups Salsa
    1 cup shredded Cheddar Cheese

Directions

Prepare the rice according to the package instructions omitting the butter. Coat an 8 in cake pan with cooking spray and pour in 1 cup of your favorite salsa. Put 1 tortilla spread with half of the refried beans on top of the salsa. Top with another tortilla and all of the rice. Add another tortilla spread with the other half of the beans. Top with the remaining tortilla. Pour the remaining salsa on top and sprinkle with all of the cheese. Bake at 350 (about 20 minutes) until hot all the way through and the cheese is melted and starts to brown. Cut into 4 wedges and serve with salad.
