Introduction

A great way to jazz up and expand Trader Joe's packaged Jaipur Vegetables! A great way to jazz up and expand Trader Joe's packaged Jaipur Vegetables!
Number of Servings: 7

Ingredients

    1 tbsp. extra virgin olive oil
    1 pkg. firm organic tofu, cut into 72 cubes
    1 pkg. Trader Joe's "Indian Fare" Jaipur Vegs
    1- 1# can sliced mushrooms
    8 oz. skinless chicken breast, diced

Directions

Saute cubed tofu in 1 tbsp. oil oil until golden on all sides. Add can of mushrooms, Jaipur Vegetable package, and chopped chicken. Cook for 10 minutes on low.

Makes 7 - 1 C. servings. Serve over brown rice prepared with vegetable broth for flavor
