Introduction

Grilling on a cedar plank gives the Orange Roughy a lightly sweet smokey undertone that pairs nicely with the lemon juice and ANY Spice combination you like. My current personal favorite is Weber Grilling Seasonings Garlic & Herbs. You can use your favorite spices. Add a nice salad and grilled veggies to finish off a light and summery dinner.

Note: Using cedar or other hard wood planks for grilling can be done on the BBQ or in the oven. Just follow the directions. Don't know where to get the wood planks? Try Cost Plus World Market, they have many varieties available.

Ingredients

    Orange Roughy, 4 oz filet
    Lemon juice, 1/2 tbsp
    Spices, 1/2 teaspoon or more to your taste. Any combination of spices will do. What ever you have in you pantry, Rosemary, Thyme and Oregano are always good.

Directions

If using a wood plank for grilling, follow directions included with the plank for prep.


Pre heat the grill or oven (350 F).

Put filet on prepared cedar plank or cookie sheet sprayed lightly with Pam.

Squeese Lemon juice on fish, both sides.

Sprinkle spices on fish, both sides if you wish.

Grill or Bake till done, fish flakes when forked and is no longer translucent.

Plate with your sides and enjoy!
