    * Olive Oil, 3 tbsp (remove)
    * Green Beans (snap), 1000 (remove) -
    * Onions, raw, 1 medium (2-1/2" dia) - grated or chopped
    * Boiled potatoes, 380 gram(s) cut in cupes or wedges
    * Red Ripe Tomatoes, 3 large whole (3" dia) (remove)


Peel the tomatoes and blend them, turning them into juice. If you don't have a blender, you can always grate them, if though it's considerably messier.

Heat 1tbs olive oil and add the onions until softened and brown. Add the green beans, the potatoes (cut in cubes or wedges), the tomato juice, salt and pepper. You might want to add a dash of sugar so that the fresh tomato doesn't taste too sour.

Top up with warm water if needed and boil in low heat until the beans and potatoes are soft and until most of the sauce is reduced. Approximately 5 min. before removing it from heat add the 2 remaining tbs of olive oil.
