    1/2 Broasted Chicken (about 2 cups) cut into chunks
    1 cup fresh corn, cooked and cut from the cob
    1/3 cup red onion, finely chopped
    1 cup sweet red pepper chopped
    1 can (15 oz) black-eyed peas, drained and rinsed
    3/4 package Barilla Plus penne pasta, cooked and drained
    Freshly ground Pepper to taste
    Cilantro (optional)

    1/2 cup Fat-Free Mayonnaise
    2 Tablespoons Dijon Mustard
    1/4 cup Fat-Free Caesar Dressing
    Juice 1/2 lemon
    Zest 1/2 lemon


Makes 12 servings about 1.5 cups each.

Cook the corn, let cool some and cut kernels off of cob.
Cook the pasta and drain it and put it in a large bowl.
Drain and rinse the black-eye peas. Dump into bowl with pasta.
Cut the chicken into cubes. Chop the onion and red pepper. Add to the pasta.

Whisk the dressing ingredients together and pour over the salad. Toss to combine.

Serve over a bed of mixed salad greens.
