Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    Portabella Mushrooms, 16oz
    *Peppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"
    Onions, raw, 1 medium (2-1/2" dia)
    Butter, salted, 3 tbsp
    Chicken Broth, 1 can (10.75 oz)
    Spinach, fresh, 1 package (10 oz)
    Canned Diced tomatos 10 oz can)
    *Barilla Plus Penne, 8 oz (remove)


Directions

Melt butter in a large saute pan.

Dice peppers and onions.

Add peppers, onions and mushrooms to hot saute pan and cook until tender.

Grill chicken until cooked until done.

Cook penne pasta according to package instructions.

Add chicken broth and diced tomatos to saute pan and reduce liquid while penne is cooking.

Add spinach to pan just before serving to wilt.

Toss vegetables with penne pasta and top with grilled chicken.
