    1 tablespoons extra virgin olive oil (EVOO)
    1 pounds ground turkey
    1 teaspoons poultry seasoning
    Salt and freshly ground black pepper
    1 sprigs rosemary, finely chopped
    4 large cloves garlic, finely chopped
    1 onion, finely chopped
    2/3 cup shredded carrot
    5 6" ribs celery
    1 fresh bay leaf
    2 tbsp tomato paste
    1/4 cup red wine
    1 cups turkey stock or chicken stock
    1 can diced tomatoes, no salt added (28 ounces)


In a heavy deep skillet heat oil over medium-high to high heat, add meat, season with poultry seasoning, salt and pepper, brown the meat and crumble, 7-8 minutes. Add rosemary, garlic, onions, carrots, celery, bay leaf and cook to soften 7-8 minutes more. Stir in tomato paste 1 minute then red wine, stir a minute more, add stock and tomatoes and . Reduce heat and simmer for 12-15 minutes. 6 - 8oz servings (give or take)
