Great in a sandwich or salad. Like a crab cake, but with salmon. The baking really lightens it up.

Number of Servings: 2
Ingredients
-
1 pouch Pink Salmon (7 oz)
1 Tbsp Light Mayonnaise
1 tsp dried parsley (or 1Tbsp fresh)
1 egg beaten
1/4 cup crushed saltines (about 7 crackers)
1/4 tsp seasoned salt or Old Bay seasoning
Pepper to taste
1 Tbsp melted butter or butter spray for cooking
Juice from 1/2 a lemon - or use after to taste
Directions
Stir together mayonnaise, spices, crackers, then add the fish. Add enough egg to hold together. You may not need it all.
Form into 2 or more patties and place on a prepared baking sheet (sprayed with butter-flavor Pam) and drizzle with the melted butter. Broil until golden brown about 15 minutes total. Broil lower if the brown too quickly.
Serve with your favorite sauce, lemon juice, or eat plain.
