Number of Servings: 4

Ingredients

    1/2 cup uncooked Instant Brown Rice (1 cup cooked)
    1 medium Onion, chopped or about 1 cup
    3/4 cup Frozen Whole Kernel Corn, thawed
    1/3 cup Fresh Parsley, chopped
    1/2 tsp. Dried Basil
    1/4 cup chopped Pecans
    2 teaspoons I Can't Believe It's Not Butter Spread
    1/4 tsp Salt
    Cooking Spray

Directions

Yield: 4 servings (1/2 cup servings).

1. Cook rice according to package directions, omitting salt & fat.
2. While rice is cooking, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion, and cook 5 to 6 minutes or until brown. Add corn and basil; cook 2 minutes, stirring constantly. Remove from heat; add rice, parsley, pecans, margarine spread, and salt. Toss gently.
