    2 whole-wheat tortillas
    3 c green leaf lettuce, chopped
    1 cup black beans
    6 oz. chicken breast, cooked and shredded (add mexican spices when cooking, if you want)
    1 medium tomato, diced
    3 oz. pepper jack or cheddar cheese, shredded
    1/3 cup salsa
    3 Tbsp sour cream (optional, not included in calorie count)


Preheat oven to 400F. Cut whole-wheat tortillas into sections, like chips, spread on a baking sheet, and bake until crisp.

While baking tortilla chips, spread lettuce onto plates, and top with beans, chicken, tomato, cheese, salsa, and sour cream if using.

When chips are done, add chips in equal portions to each salad. Makes 3 salads.
