Ingredients

    1 cups Red lentils
    1 Cauliflower
    1 Onion
    2 Garlic cloves
    2 ½ T. powdered curry
    8 cups low sodium Vegetable stock

Directions

In small fry pan, heat dry curry until pungent aroma, remove from heat. Cut cauliflower into small pieces. Finely dice onion. Combine vegetables, pressed garlic, lentils, curry and stock in soup pot. Bring to boil and then lower heat to medium low and cook for 2-3 hours. Eat.

Makes approx. ten 1-cup servings
