Introduction

Ingredients

2lbs ground turkey
1 medium onion
1 green bell pepper
2 large cans of diced tomatoes
3 carrots
1/2 cup ketchup
3 cups of pinto beans
1/4 cup fresh diced cilantro
1 tbsp chili powder
Directions
Dice the green pepper, the onion, and the carrots.
Lightly oil a large skillet and heat on medium. Toss in the peppers and onions and allow to sweat, but not to brown.
Add ground turkey, and brown completely.
While the turkey is browning, heat a large pot to medium-high. Toss in diced carrots.
Once the turkey is browned, put it in the pot with the carrots, and stir to combine.
Add beans and spices, stir well.
Add ketchup, and diced tomatoes, and stir well.
For thicker chili, use 1and 1/2 cans of diced tomatoes and 1 small can of tomato paste.
For thinner, more soup-like chili, add chicken broth to consistency.
Allow to simmer, covered, for about 15 minutes.
Serve hot with a dollop of greek style yogurt and diced green onions.
