    1 Zucchini, sliced the long way
    2 medium mushrooms, diced
    1 garlic clove, diced
    1/4 cup parmesan cheese, grated
    1/4 cup seasoned bread crumbs
    2 Tbls ICBINB light


Scoop out middle of zucchini and saute with the diced mushrooms and garlic in 2 Tbls ICBINB light. over medium heat.
When the mushrooms and zucchini are cooked, turn off burner and add parmesan cheese and bread crumbs. Stir to absorb the liquid. Stuff the hollowed out zucchini with the stuffing and bake in over for about 10 - 15 minutes. Serves 2
