This soup is creamy, pretty and a great source of potassium. This soup is creamy, pretty and a great source of potassium.
Number of Servings: 12


    4 potatoes (I like Yukon Golds)
    1 yam
    4 leeks
    1 pint fat free half and half
    8 cups chicken stock
    Salt and white pepper to taste
    Couple glugs of olive oil (maybe 4 T.)


Put olive oil in bottom of pot. Slice white and light green sections of leeks thin, add to oil on low heat. Peel potatoes and yam, dice and add to pot. Add stock and cook until potatoes/yam are tender. Spoon into blender and puree. Return to pot. Add fat free half and half and salt and pepper to taste. Eat. (This is terrific chilled, also)

Makes approximately 12 one-cup servings.
