    12 cups chicken stock
    1 cube of Vegetable Bouillon (optional)
    .5 Tbsp. dried thyme
    1 tsp. poultry seasoning
    1 Tbsp dried parsley
    1 onion, chopped
    1 cup chopped celery
    1 pound raw chicken breast
    1 cup diced carrots
    1 cup pearl barley
    1 cup frozen chopped spinach
    Add salt and/or fresh ground black pepper to taste.


In a large stock pot, combine chicken, chicken stock, vegetable bouillon, dried thyme, dried parsley, and poultry seasoning . Simmer 15 minutes while you chop vegetables.

After 15 minutes, Remove and dice chicken breast. Place back in pot along with chopped vegetables (except spinach) and barley. Simmer 45 minutes to one hour (or until barley is done to your taste.)

Add frozen spinach in the last 15 mins of cooking time. If using quick cooking barley, add at this time.

Add more water if the soup reduces too much.

Season with fresh ground black pepper and salt to taste.
