    1 onion finely chopped
    500 g of chicken livers
    6 teaspoons pf mixed herbs
    4 garlic cloves
    1 teapspoon of single or double cream
    Tablespoon of whiskey (or alternative)


Remove membranes and fat from livers, set aside.
Add onion to olive oil and fry until softenened and going brown
Add chicken livers, garlic & herbs until livers are cooked (about 7 mins)
Season with salt & pepper
Add to a food blender and add whiskey (or brandy, port or jack daniels)
Add cream and blend for five minutes.
Serve into dishes (flattening top with the back of a spoon) and leave to cool, keep refrigerated overnight and serve with warm crusty bread.
