    2 oz cooked chicken breast
    1/2 cup cooked Uncle Ben's brown rice
    1/2 of a red bell pepper
    3/4 cup chopped carrots (bite size)
    1/2 cup chopped onion
    1/2 cup sugar snap green beans
    2 tbsp virgin olive oil
    2 tbsp (1oz) chopped cashews (MUFA)


Cook rice until tender.
Cut up all the vegetables and chicken in bite size pieces. Spray wok type pan with non stick cooking spray and cook the carrots for about 5 minutes. Add olive oil and add peppers and oniones. Once tender add the cooked rice and cooked chicken. Add pre cooked sugar snap green beans stir . ready to serve. recipe calls for soy sauce but that creates too much sodium..
Makes 1 big helping serving.
