Hearty filling soup that can be customized to use garden bounty such as zucchini, green beans, eggplant, etc. Use the crockpot on low all day until dinner. Simmer on stove top for 1-2 hours. Ingredients

    1-1/2 cups dried lentils
    2 stalks celery, chopped
    2 orange or red bell peppers, chopped
    1 Vidalia onion, chopped
    4 baby potatoes with skin, quartered
    4 carrots, sliced
    3 cloves fresh garlic, minced
    1 28-oz can diced tomatoes and juice
    2 cups vegetable broth
    1 4-oz can sliced mushrooms and liquid
    1/2 tbs chipotle chili pepper
    1/2 tbs smoked paprika
    1 tsp marjoram
    2 tsp Italian seasonings
    2 bay leaves
    1 tsp turmeric
    1.5 cups Dreamfield's elbow macaroni
    1 tbs tahini (optional) to thicken

Directions

Saute raw veggies except potatoes in olive oil in cast iron skillet until slightly translucent. Add to crockpot or stockpot. Add in diced tomatoes and their juice, mushrooms,and their juice, and vegetable broth. Add spices (more if you like it really spicy) and crush all herbs except bay leaves between your palms to release flavor. Bury bay leaves in liquid. After soup is done, season to taste with salt and pepper or use Bragg's. If desired stir in one tbs tahini diluted in 1/2 cup water to thicken and add protein.
