    1/4 cup oil for frying
    1/4 cup all-purpose flour
    1 green bell pepper, chopped
    1 onion, chopped
    2 cups cooked, chopped chicken breast meat
    2 (14.5 ounce) can diced tomatoes,no-salt-added
    1 (8 ounce) pkg mushrooms, sliced
    2 tablespoons chopped fresh parsley
    2 teaspoons Worcestershire sauce
    3 cloves garlic, minced
    1 teaspoon low sodium soy sauce
    1 teaspoon white sugar
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    3 dashes hot sauce
    cayenne pepper, to taste
    8 oz frozen corn


1. Heat oil in a large skillet over medium heat. Stir in flour and cook, stirring constantly, for 5 minutes or until mixture is the color of a copper penny. Reduce heat to low and stir in bell pepper, mushroom and onion. Cook 10 to 15 minutes, or until tender, stirring occasionally.

2. Add remaining ingredients. Stir together, cover and simmer for 20 minutes.

  • I made this recipe last night... it was excellent! Reduced the amount of oil and flour to 2 Tbsp each, and used olive oil instead of vegetable oil. Also left out the corn and celery and increased the mushrooms. Added some red pepper flakes to kick up the spice. Will be making this often! - 11/9/11
