Ingredients

    4 slices bacon, cooked & diced
    1/2 cup Italian Arborio Rice
    2 cups 100% Fat Free Vegetable Broth
    1/4 red onion, diced
    12 ounces chicken breast, diced
    2 ounces smoked gouda, diced

Directions

Saute onion in bacon fat, add chicken, cook until almost done. Add rice, cook for 5 minutes. Add broth (warm), a ladle at a time until absorbed by rice. Add gouda and bacon, cook until cheese is melted.
