    1 Cup uncooked brown rice
    2 Cups cooked, diced chicken breast
    1/3 C scallions
    1/2 C shredded carrots
    2 C shredded cabbage
    1 Tbs cilantro
    4 tsp canola oil
    1 tsp dark sesame oil
    4 Tbs lime juice
    1/2 tsp garlic powder
    1/4 C slivered almonds


Cook brown rice according to instructions on package and cool. When cool, add chicken, scallions, cabbage, carrots and cilantro. In a small bowl, whisk together canola oil, sesame oil, salt, lime juice and garlic powder. Pour over chicken and rice mixture and refrigerate until ready to eat. Just before serving add almonds. Makes 4 main dish servings.
