Number of Servings: 8


    1.5 cups AP flour
    1.25 cups Whole Wheat Four
    0.25 cup flax meal
    1.5 tsp salt
    2 tsp yeast
    1.25 cups warm water
    2 tbsp olive oil


1. Activate yeast in the warm water.
2. Stir together all ingredients to form a ball. If need to add more water, add a tbsp at a time.
3. Knead dough approx. 10 minutes.
4. Place dough in a lightly greased bowl and cover. Let sit for 90 minutes or until double in size.
5. Punch dough down to release gases and form into 8 pieces. Roll pieces into a ball.
6. Let the 8 pieces of dough rest for 20 minutes. Cover with a damp towel.
7. Preheat oven to 400 degrees. Place cookie sheet in oven so it's hot.
8. Roll out dough balls to between 1/4 to 1/8 inch thick.
9. Place pita bread on baking sheet and bake for about 5 minutes. They should puff after about 3 minutes.
Makes 8 pitas.
