    Onions, raw, 1 cup, chopped
    *Coriander seed, 1 tsp
    *Tomatoes, red, ripe, year round average, 1 cup
    Egg, fresh, 1 cup (4.86 large eggs)
    Light Butter, 50 gms.


Melt the butter in a pan, and add chopped onions. Add the coriander seeds. Fry until onion is light brown. Add tomatoes and cook until soft. Add eggs and stir until firm and cooked. Add salt and pepper to taste, topped with garnish of chopped coriander leaves. Serve on toasted bread slices or even hot baguettes.
