Introduction

This pesto is super-quick to make and is absolutely delicious. Rich in MUFAs, the pesto can be eaten on whole grain crackers, over pasta, or with crudites. This pesto is super-quick to make and is absolutely delicious. Rich in MUFAs, the pesto can be eaten on whole grain crackers, over pasta, or with crudites.

Ingredients

    4 cups fresh spinach, rinsed
    1/2 cup walnuts
    2 Tbsp. olive oil
    4 cloves garlic, peeled
    1 tsp salt

Directions

Makes 2 cups.

Place all ingredients in a food processor fitted with an S-blade. Whirl.

This pesto will keep in the refrigerator (in a sealed plastic container) for about a week (probably more, but we usually finish the pesto in less than a week!). You can also freeze the pesto - again, in a sealed plastic container. Enjoy!
