    8 oz Dried Bacalao
    4 Cups Chicken Broth, Low Sodium
    4 Cups Water
    2 Cups Cowpeas (Black Eyed Peas)


1. If the Bacalao has not been desalted, you will need to soak it for several days, changing the water several times a day.

2. After soaking the Bacalao, cut it into small bite sized pieces.

3. Place the Bacalao pieces and the cowpeas in a deep pot with the water and cook for about 30 minutes. Then add the chicken broth.

Taste and adjust the seasoning by adding salt if needed, or pepper.

Serves: 8 (About 1 cup/serving, with solids
divided evenly)
