Number of Servings: 2


    Large chicken breast (boneless/skinless) halved and cut into chunks
    1 Tbsp olive oil
    1 mango cut into small chunks
    4 Tbsp balsamic vinegar
    salt (to your taste)
    pepper (to your taste)
    garlic powder (to your taste)


Chunk chicken breast (1/2 inch thickness). Add chicken to hot olive oil in deep frying pan. Sprinkle with salt, pepper and garlic powder (to your taste) Cook chicken until nearly done and add Balsamic. Peel and chunk mango (small chunks). Cook chicken until Balsamic is reduced to half. Add mango chunks and cook until mango chunks are hot. Serve next to your favorite vegetable. Serves 2.

    This recipe was good, though it could be better. It needs more sauce. hmm. I'm not quite sure as to what I would add to it, but I am going to tinker with it a little bit and post my findings. Thanks for the recipe! - 8/5/10
