Yummy soft veggies with tons of flavor! Yummy soft veggies with tons of flavor!
Number of Servings: 8


    2 med - large Bell Peppers - sliced
    1 med sized onion - sliced
    2 med - large zucchini - sliced
    Extra Virgin Olive Oil - 2-3 tbsp
    Chicken stock or bullion cubes


Mix all veggies, oil and stock together in a grill safe pan. (You can also use 2-3 chicken bullion cubes and up the oil 1 tbsp. Just mix them in with the veggies and oil. I will do this when I'm in a hurry.) Put on the grill with your meat for about 45-60 minutes. Veggies will turn out soft and yummy! Lots of flavor with only a few cals and just a little fat!
