Number of Servings: 4

Ingredients

    * 1/2lb linguine pasta
    * 2 eggs
    * 1/4 pound bacon or pancetta
    *3/4 cups Parmesan cheese
    * 4-6cloves of garlic
    * 1 small onion
    * 1/2 cup chicken stock
    * 1/2 cup white wine (or substitute another 1/2 cup of stock)
    * 1/4 stick of butter
    * 1 handful of parsley
    * 1-2 tablespoons black pepper

Directions

-Chop bacon in 1-inch pieces and fry up until crisp but not burned. Remove wth a slotted spoon to a dish.

-Start the pasta water (salted)

-Chop your onion. Add to bacon grease and cook. Add garlic. Don't burn! Remove with slotted spoon and add to bacon. Pour out grease.

-Add one cup of broth (or white wine) and scrape pan. Add the rest of the stock.

-Return bacon and onions to pan. Stir and simmer over medium heat.

-Put eggs, cheese and parsley in a bowl large enough to mix pasta in. Mix it up.

-Drain water off of pasta and imediately add to the egg mixture. Toss to combine and serve.
