    4 C. water
    1 head cauliflower, cored & grated
    1 onion, chopped
    1 T. lemon juice
    3 lg. carrots, peeled & shredded
    1 bunch broccoli, crowns chopped
    3/4 C. flour
    3/4 C. cheese blend powder
    1 1/2 t. salt, or to taste
    1/4 t. pepper, or to taste
    1 pint fat free half & half


Boil water in large pot. Add cauli, onion, lemon juice & carrots. Return to boil & cook until tender (10-15 min.). Remove from heat, do not drain. Blend in pot with hand blender until relatively smooth (should still have some texture). Return pot to heat & add broccoli; simmer until tender. Meanwhile, add 2 1/2 C. hot water to regular blender. Start blending on low & add flour, then cheese powder; blend until smooth. Continue blending & add half & half; blend until smooth. Add cheese mixture to veggies in pot & stir to combine. Simmer, stirring frequently, until broccoli is tender & soup is heated through. Add salt & pepper to taste. I sometimes add a little poultry seasoning as well. This is yummy & definitely doesn't taste as low in fat as it is!
