Introduction

Serve this with my fajita chicken, some chopped tomatoes and avocado (or salsa and guacamole) and some corn tortillas. Serve this with my fajita chicken, some chopped tomatoes and avocado (or salsa and guacamole) and some corn tortillas.
Number of Servings: 4

Ingredients

    1 tbsp finely chopped onion
    2 finely chopped garlic cloves
    1 tsp olive oil
    1 can mixed beans (or any bean of your choice)
    Juice of 1 lemon
    black pepper
    chili powder to taste
    1 tsp cumin
    1/2 tsp coriander leaf

Directions

Fry onion and garlic gently in olive oil.
Add beans (drained and rinsed) and all other ingredients and cook gently for 10-15 minutes.
Mash to desired consistency using a potato masher, adding a little water to make it creamier if you like. (Salt can be added to taste at this stage if you like, but this is not included in the recipe calculation as I don't usually find it needs it.)
Makes 4 servings (or 2 huge ones!).

    This is best homemade refried beans I ever tasted. The lemon added the right zing! I used leftover home cooked pinto beans instead of canned beans. I will making this again and again - 3/4/11
