Loaded with vegetables and protein, this easy recipe tastes delicious. Loaded with vegetables and protein, this easy recipe tastes delicious.

    1 clove of garlic
    2 large yellow squash
    1 large can diced tomatoes, drained
    1 can chick peas, drained
    1 can tomato paste
    2 tablespoons curry powder


Spray a large, non-stick skillet with Pam. Add the clove of garlic and sautee.

Slice yellow squash and add. Sautee 3-5 minutes.

Drain the tomoatoes and chick peas. Add just as the squash are beginning to soften. Add curry powder to the skillet and blend.

Add tomato paste and mix in.

Simmer for approximately ten minutes, and serve.

Tastes great served over couscous.
