Ingredients

    6 oz skinless chicken breast
    1 can italian tomatoes
    3 tbsp shallots
    3 cloves garlic
    3 tbsp balsamic vinegar
    3 oz red wine
    10 leaves fresh basil
    1 oz parmesan cheese
    2 tbsp dried oregano
    kosher salt and fresh ground pepper to taste

Directions

divide wine, canned tomatoes, balsamic vinegar, salt, pepper and one tbsp oregano into two baking pans

divide chicken into pans and top with salt, pepper, oregano, fresh sliced tomatoes, minced garlic, shallots and torn basil leaves- bake at 350 for 25 minutes(topped with foil)
remove foil, add parmesan and drizzle with balsamic
return to oven for 5 minutes(or until cooked through)
times may vary because I used chicken tenders rather than breasts
serves 2-3 d
