Introduction

I usually make double to keep on hand for lunches throughout the week. I usually make double to keep on hand for lunches throughout the week.
Number of Servings: 6

Ingredients

    8 ounces rotini pasta, or other shaped pasta (not noodles) – cooked and cooled
    20 fresh peapods
    1 small cucumber, diced
    2 medium carrots, julienne sliced
    1 medium yellow, red or green pepper (I usually double this recipe and use 2 different colored peppers)
    ¾ cup sliced radishes (optional)
    ½ cup sliced green onions
    3 Tbls. snipped fresh cilantro
    1/3 cup chopped peanuts (sprinkle on top, just before serving)

    Dressing
    ¼ cup salad oil
    3 Tbls. rice vinegar
    2 Tbls. sugar
    2 Tbls. soy sauce
    1 tsp. grated ginger root (may add more to taste)
    1 tsp. chili oil (may substitute Tabasco sauce to taste)

Directions

Mix the pasta and vegetables. Add the dressing and marinate for a couple of hours or overnight. Sprinkle the nuts on top just before serving.
