Introduction

Ingredients

4 medium zucchini chopped into "hunks"
1/2 - 1 cup onion also chopped into "hunks"
1 pound of Ground Turkey
2 cups of your favorite prepared Spaghetti
Sauce (We like Delmonte.)
1 tsp. Garlic
Oregano to taste.
1 cup part skim Mozzarella cheese, grated.
Grated Parmesan Cheese to taste.
Directions
Placed chopped zucchini and onion in a microwave safe casserole dish (8X11.5X2), with a little water for steaming. Drain any excess water and return zucchini and onion to casserole dish. Microwave for 8 minutes - stopping microwave half way through to stir vegetables.
Meanwhile, in a non-stick skillet over medium heat, brown ground turkey until done. Add Spaghetti Sauce, garlic and oregano. Heat thoroughly. Pour finished meat sauce over the zucchini and onion, spreading to edges of dish. Top casserole with grated Mozzarella cheese and sprinkle with Parmesan cheese. Place under broiler just until cheese melts. Makes approximately 6 one cup servings.
