    1 cucumber, diced
    1/2 an onion, diced
    2 tomatoes, diced
    1 can chickpeas, rinsed
    1/4 cup chopped red pepper, or more if desired
    Apple cider vinegar
    Agave nectar
    Lemon juice
    Mint, basil, and parsley or fresh dill


Chop all vegetables and combine.

Add dressing to taste -- vinegar, agave, lemon juice, and herbs, with salt and pepper to taste. I used about a tablespoon of agave nectar and 1/3 cup vinegar, but this is completely subjective based on taste.

Cool in refrigerator for at least 30 minutes to let flavors blend; serve cold.
