    3 slices firm tofu (Mori Nu Lite Firm Calculated)
    4 cloves garlic, minced
    1 egg white
    1/4 cup bread crumbs, plain
    1 Tb Oregano, dried
    1 Tb Basil, dried
    1 Tb Parsley, dried
    1 ts soy sauce

    set aside 1 Tb Olive Oil


For the tofu drain as well as is humanly possible. I froze the tofu the night before then thawed it, then squeezed out remaining liquid. Crumble tofu in food processor with all other ingredients but for olive oil. Process till well mixed, it should start to stick together on its own. Roll into 10 one-inch balls. Dip each ball into the olive oil you set aside and roll in hand till well coated. Pour any remaining olive oil on pan and spread with hands. Space balls apart and put in oven. Bake for 20-25 minutes, turning about half way through. Serve over spaghetti and sauce.

    Egg whites aren''t vegan, so neither is this recipe. Using an egg replacement would make it vegan and wouldn't alter the taste, which I'll bet is pretty good! Thanks for the recipe. - 3/7/08
