Ingredients

    3 whole Chicken Breasts, bone and skin removed
    *POM Pomegranate Blueberry Juice, 4 oz
    *Onion powder, 1 tsp
    Garlic powder, 1 tsp
    Ginger, ground, 1 tsp
    Chili powder, 1 tsp
    Bread crumbs, dry, grated, plain, 1 cup (remove)
    Lemon Peel, 2 tbsp (remove)
    Salt, .5 tsp (remove)
    Pepper, black, 1 tsp (remove)
    *Extra Light Olive Oil, 2 tbsp (remove)
    Oikos Organic Greek Yogurt, Plain, 6 oz (remove)

Directions

Cut the chicken breasts into smaller pieces (about deck of card size). In a large glass/ceramic bowl, immerse the chicken in the juice and refrigerate covered for 20-30 minutes. Drain out juice and sprinkle in onion, garlic and chili powders and ginger. Using your hands, toss the chicken to distribute the spices evenly; then refrigerate for 30 minutes.

Mince lemon peel (zest only) and mix on a flat dish with bread crumbs, salt and pepper. Using a pastry brush, paint a heavy baking pan with the olive oil. Preheat oven to 400ยบ. Take chicken from refrigerator and dip each piece in bread crumb mixture, placing each breaded piece on the oiled pan. Place in oven and bake for 15 minutes. Turn each piece and return to oven for another 15 minutes. Serve with about 2 tablespoons of plain greek yogurt (you can also use low fat sour cream) on the side. Great with a green salad.
