    1/2 c red onion, minced
    1 jalapeno, seeded & minced
    1 whole pineapple, cut into cubes
    1 papaya, peeled & cut into cubes
    Strawberries, approx. 1 c quartered
    1 banana, sliced
    2 T fresh cilantro, chopped
    1 T fresh mint, chopped

    (Can use dried cilantro & mint, adjust amounts to taste.)

    Juice of a lime
    1/2 t ground ginger
    2 T honey
    1/2 t sea salt
    1/8 t freshly ground black pepper


Add chopped fruits to a bowl in the order listed and mix gently.

To make dressing, juice the lime into small bowl. Add ginger, salt & pepper and whisk. Continue whisking while drizzling honey into the juice. Pour dressing over the fruit, toss gently. Refrigerate at least one hour to let the flavors meld. Makes about 6 one-cup servings.
