Ingredients

    1 Aubergine
    1/2 Can Tomatoes
    12 Cherry Tomatoes
    2 Bell Peppers
    2 Mushrooms
    1/5 Large Onion
    1 Clove Garlic
    1 Bunch Spinach
    160g Ground Pork
    2 Cheese Slices (Low Fat)
    Salt and Pepper to Taste
    1 Tbs Cinnamon

Directions

1) Roughly Chop all Vegetables and season. Place on baking tray and oven cook for 10 minutes. (No oil required)

2) Fry off mince in pan. (No oil required)

3) Add canned tomatoes to the mince and simmer. Season.

4) Remove aubergine from the baked vegetables and set aside. Pour the remaining vegetables into the mince and mix thoroughly.

5) Pour the mince/veg mixture into a deep baking dish. Layer the aubergine on top. Lay two cheese slices over the aubergine.

6) Sprinkle with cinnamon and oven cook for 5 minutes until the cheese bubbles.

Serve with salad and crusty bread.

Makes three 2 cup servings.
