Ingredients

    2 large eggs
    1 bunch fresh spinach
    1 oz semisoft goat cheese
    5 mushrooms
    2 oz chicken
    1 tbsp extra virgin olive oil
    1 tsp fresh rosemary

Directions

Prep:
Cook chicken in advance, using favorite method. I made this with leftover chicken from grilling the night before.
Chop mushrooms and chicken, not too fine. Grind or chop rosemary.
1. Sautee mushrooms in a heavy skillet on medium in 1 tbsp olive oil about three minutes (or until browning).
2. Beat 2 eggs in a bowl until blended.
3. Add spinach and rosemary to skillet. Cook until spinach "deflates."
4. Add cooked chicken and crumbled goat cheese. Cook for two minutes.
5. Add cooked eggs, and instead of keeping the omelette intact, scramble all ingredients together until the eggs are solid.
6. Serve immediately! Makes one scramble. Double ingredients for more than one.
