Ingredients

    2 large leeks
    2tbs unsalted butter
    2 tbs olive oil
    1 jalapeno pepper
    2 tsp salt
    # *Cumin seed, 1 tsp
    # Beans, red kidney, 1 can
    # Red Ripe Tomatoes, 1 medium whole
    # Okra, 10 pods (3" long)
    # Sweet Corn, Fresh, 2 ear, medium
    # Zucchini,
    # Tomatillos, 6 medium

Directions

Heat oil and butter in pan. Add leeks and cook 3 minutes until tender. Add 6 cups water, beans, tomato, okra, corn, corncobs, squash, tomatillos and boil. Reduce heat and simmer 20 minutes.

Season with salt, pepper and serve garnished with cilantro or sour cream.
