Introduction

A quick and healthy side dish...the only way I get to eat carrots!! A quick and healthy side dish...the only way I get to eat carrots!!
Number of Servings: 6

Ingredients

    Raw Carrots slices or strips (or both), 4 cups
    Green Peppers (bell peppers), 6 tbsp
    Onions, raw, 6 tbsp chopped
    Vinegar, 1/2 cup
    Ketchup, Heinz, 1/3 cup
    Carrots, raw, 4 cup, strips or slices
    Granulated Sugar, 4 tsp

Directions

Boil carrots until tender but crunchy, place carrots in bowl and add chooped green pepper and chopped onions to bowl. In another pot, mix vinegar, ketchup and sugar and bring to boil while stirring to ensure the sugar does not stick to the bottom of the pot. pour the vinegar mixture into the bowl and mix. leave to cool and place in refrigerator till serving time.Serve chilled.
