    2 Cups Chicken Breast, cooked and diced
    Carrots, sliced (as much/little as you like)
    Celery, diced (as much/little as you like)
    5 Low Sodium Chicken Bouillon Cubes
    4 Cups Water
    1 Tbsp I Can't Believe It's Not Butter- Light
    2 Tbsp White Flour
    1-1/2 Cups Egg Noodles, cooked and drained

    Bay Leaves


Boil water, then add bouillon cubes and stir until dissolved. Add carrots, celery, chicken, parsley and bay leaves, and cook until carrots are tender.

While carrots are cooking, melt butter and stir in flour to make a thickening base (roux). When the butter/flour mixture is smooth, add a little of the broth to it (about 1/2 cup to thin the roux and help prevent lumps in the soup broth), then pour it into the soup. Add noodles and cook for about 5 more minutes.

Makes four 1-cup servings.
