    1/4 cup finely chopped pancetta, salt port, or bacon (3 slices)
    1 lb. ground beef
    1/2 lb. ground veal or pork
    1 28 oz. can tomatoes, cut up
    2 or 3 chicken livers, chopped (optional)
    1 cup chopped onion
    1/4 cup finely chopped carrot
    1/4 cup finely chopped celery
    1/4 cup smipped parsley
    1/4 cup tomato paste
    1/2 tsp. instant chicken bouillon granules
    1/8 tsp. ground nutmeg
    1/2 cup dry white wine
    1/3 cup light cream or milk (optional)
    12 oz. hot cooked pasta


In large saucepan or Dutch oven cook pancetta, salt port, or bacon till crisp. Add ground beef and ground veal or pork; cook till meat is brown. Drain off fat.
If desired, pass undrained tomatoes through food mill or sieve. Add undrained tomatoes, chicken livers, onion, carrot, celery, parsley, tomato paste, bouillon granules, nutmeg, 1 tsp. salt, and 1/4 tsp. pepper to meat mixture. Stir in wine and 1/4 cup water. Bring to boiling; reduce heat. Boil gently, uncovered, for 45 to 60 minutes or till desired consistency, stirring occasionally.
Just before serving, stir cream or milk into the hot sauce, if desired. Serve meat sauce with pasta. Serve immediately. Pass shredded or grated parmesan cheese, if desired. Makes 6 main dish servings.
