Introduction

Ingredients

    Chickpeas , 2 cup
    Cucumber (with peel), 1 cucumber (8-1/4")
    Red Onions, raw, 1 medium (2-1/2" dia) finely sliced
    Feta Cheese, 100 grams
    Red Wine Vinegar, 2 tbsp
    Olive Oil, 1 tbsp
    Parsley, 6 tbsp or one bundle chopped. Flat is best if you have.
    Basil, 2 tbsp

Directions

I chop the ingredients in the morning while waiting for my oatmeal to cook. It tastes better when its been made ahead and has time for the flavours to mingle.

If your making ahead deseed the cucumber or it gets a little too wet.
Rinse can of chickpeas
Finely slice red onion.
Crumble feta.
Mix rest of ingredients together.
Toss in tubberwear bowl with very reliable seel and shake.
Sit in fridge til ready to eat.

    This is really good and light, perfect for summer. I also use it and put it over tomatoes for a little extra nutrients and color. :) - 7/8/09

    I loved this recipe! It had wonderful flavor and was so filling! I ate it for lunch and when dinner rolled around 6 hours later, I was still not hungry. Excellent recipe! - 7/29/09

    It was a very good salad, I had it on a bed of greens. I did not have red onion, I used a sweet onion but it was still very good. I would maybe add a red of yellow pepper. - 8/2/10

    Very Good
    I made this with curled parsley and goat cheese because that was what I had on hand. I also omitted the cucumbers since I don't like them. This recipe was very filling but I still think next time I will put it over a little spinach or salad greens. - 7/26/10
