    4 medium sweet potato
    1 cup brown sugar
    1 tblsp corn starch
    1/4 tsp salt
    1/2 tsp orange peel [grated]
    1 cup orange juice
    1/4 cup raisins
    3 tblsp butter
    2 tblsp dry sherry
    1/4 cup walnuts [chopped]


Cook potatoes in boiling salted water, until tender. Drain. Peel and cut into slices slices. Arrange in an ablong baking dish [13.5 inches x 9 inches]

In a saucepan, combine, brown sugar, cornstarch and 1/4 tsp salt. Blend in orange juice, add grated orange peel and raisins. Cook and stir over medium heat, till thickened, cook 1 minute longer. Add butter, dry sherry and walnuts, stirring till the butter is melted. Pour over the sweet potatoes. Bake 325 degree oven for 30 minutes.
