Ingredients

    Sauce:
    Red Ripe Tomatoes, 2 large whole
    Tomato Paste, 0.5 cup

    Meat and veggies:
    Onions, raw, 1 large
    Portabella Mushrooms, 1 pound
    Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
    Ground bison (buffalo), 1 pound (or ground turkey)

    Barilla Elbow Macaroni, 1 pound(whole grain pasta is preferred)

    Smart Balance, Smart Balance Omega Plus Buttery Spread, 1 Tbsp
    Garlic powder, 1 tsp
    Pepper, black, 1 tsp
    Basil, 1 leaves
    Thyme, ground, 1 tsp

Directions

In a large pot cook 1 pound of pasta. preferably whole grain. Rottini or other pasta to suit tastes.

While pasta cooks, cube or dice 1 red pepper. use 1 tsp of smart balance to saute the pepper. Stir frequently.
Dice or cube 1 medium or large onion and add to the pepper in the pan.
Slice, cube or dice 1 pound of Portabella mushrooms.
Add to the pan.

The peppers and onions should start browning. The mushrooms should become a little tender. Avoid overcooking.
Remove from heat and drain.

Brown 1lb of Ground Bison or Ground Turkey
Drain.

Slice or dice 2 large tomatoes. Use blender to blend the tomatoes and 1 small can of tomato paste into a liquid.

If pasta is done cooking strain then mix all ingredients add spices to taste (avoid spices with salt in the name)

If timed right all the cooking can be done simultaneously. If the timing isn't working some prep time on the veggies can help.

Makes about 6 portions.
